Sholto Wilson — Sunday 17th May - Kitchen Takeover


We’ve been plotting this one for a while and are so excited to finally share it with you all.

On Sunday 17th May, Sholto Wilson joins us in the kitchen for a one-off service — a menu shaped by the season, by instinct, and by a way of cooking that feels both precise and expressive.

Sholto is a London-based chef whose time at Rita’s Dining, Oranj Wine and Sessions Arts Club has helped form a style that’s confident but never overworked — plates that feel considered, but still generous. His cooking draws on British and French foundations, layered with influence from his uncle’s Iraqi heritage, and guided by a deep, almost intuitive use of herbs.

That relationship to flavour goes back further — from early days cooking in Brighton to time spent managing a hydroponic farm. It’s something that still runs through everything he does: freshness, lift, and a kind of balance that holds everything together without needing to shout.

Alongside this, he runs Sholt and Pepper, his own supper club — a space for bringing people together around food, conversation and atmosphere. That same energy carries into this residency.

For the evening, you’ll move through a set menu that unfolds like Spring combining some of Sholto’s favourite flavours with a slightly classic spin:

Curried crab and marjoram on crostini — warm, spiced, lifted with green brightness
Bacalhau with grilled cucumber, peas, ajo blanco, sea herbs, wood sorrel — clean, layered, quietly complex
Cayenne lamb with coco beans, smokey salsa verde and prune ketchup — depth, sweetness and heat sitting side by side
Poached nectarine with vanilla set custard, bay and black pepper — soft, aromatic, a gentle close

It’s food designed to be sat with. To share across the table. To be enjoyed together.

We’ll be pouring wines alongside all this goodness— bottles with energy and texture, chosen to meet the rhythm of the dishes rather than sit on top of them.
